Strawberry & Raspberry Tartlets (Vegan)

What to expect: A lovely light spring time dessert. I think kids would like these as a change to fairy cakes – but be warned they are gloriously messy!

Makes: 6 Small tartlets

Ingredients

Base

½ Cup Rolled oats (fancy term for instant porridge)

3 Tbsp flour

¼ Cup almonds

4 Tbsp light brown sugar

¼ Tsp Salt

5 Tbsp Melted coconut oil

1 Tbsp maple syrup

 

Chocolate filling

⅔ Cup Cashew Nuts (soaked in water for 3 hours & then drained)

100ml Coconut cream

2 Tbsp melted coconut oil

3 Tbsp maple syrup

3 Tbsp Cocoa powder

¼ Tsp Vanilla essence

Pinch of salt

 

Sweet topping

1 Cup Cashew nuts (soaked in water for 3 hours & then drained)

100ml Coconut cream

3 Tbsp melted coconut oil

3 Tbsp maple syrup

1 Tbsp Lemon juice

¼ Cup Frozen raspberries

¼ Cup Frozen strawberries

Directions

Base

  1. Preheat oven at 180 degrees
  2. Mix dry ingredients in mixer for 1 minute (or until smooth)
  3. Add wet ingredients and mix together for 1 minute
  4. Press mix into individual muffin tins
  5. Bake for 15 minutes (watching the edges don’t overcook)
  6. Allow to cool

Chocolate filling

  1. Mix all ingredients for chocolate filling together in mixer until smooth
  2. Pour over evenly the base
  3. Cool in fridge or freezer for 30-60 minutes

Sweet Topping

  1. Mix all topping ingredients (except frozen fruit) together in mixer until smooth
  2. Add fruit and blend again
  3. Allow to cool in fridge for 10 minutes
  4. Scoop mix on top of chocolate layer (using a frosting bag would help make these look really impressive)
  5. Place in freezer until set

 

Tip: You can change the fruit to whatever flavours you like or to change the colour

Tip: I just used a spoon to put the topping on and they didn’t look ‘sensational’, if you are making them for a dinner party or something other than ‘just for the fam’ definitely give a frosting pipe a go and get creative with the look.

 

Anything I would change next time:

These actually make really nice tarts on their own with just the chocolate mixture – next time I make them I might try them without the fruit.
