Fluffy American-Style Pancakes (Dairy Free)

I never need an excuse to make pancakes, but considering it is officially pancake Tuesday I want to share my favourite recipe for anyone that might be looking for some inspo today.

They are dairy free but you can substitute the oil for butter if you prefer.

What to expect: These pancakes are so tasty and the texture is perfect. If you like American style pancakes I promise these are the closest you will get at home.

 

Makes: 6 medium size pancakes

Ingredients

Dry

1 cup plain flour

2 Tbsp. sugar

2 Tsp baking powder

1/2 Tsp salt

Wet

1 Cup milk (soya)

2 Tbsps. vegetable oil (Or melted butter)

1 large egg

1 Tsp vanilla extract

Directions

  1.  Mix dry ingredients together in larger bowl
  2.  Mix wet ingredients in separate bowl
  3. Add wet ingredients to dry bowl and whisk for a couple of minutes until there are no lumps
  4. Pour enough for medium size pancake onto pan and cook through – these don’t really ‘spread’ in the pan so you can make them to the size you want quite easily.

Tip: Turn regularly to avoid burning.

Tip: Cut into quarters for different presentation.

Tip: Try them with Tesco maple bacon – Amazing!
